Food at Halcyon Meridian is cooked in the open — mesquite coals, clay ovens, and a bread station that fires before sunrise. We serve in the courtyard when weather allows and under canvas ramadas when the wind picks up.

The Ember Line

Open mesquite grill · Courtyard center

Our primary grill runs along the north wall of the court. Chefs work on a raised stone line visible from most tables. Smoke drifts upward through a copper vent hood open to the sky. Dinner service focuses on proteins and vegetables over direct heat — no gas burners on this line.

Clay Oven Yard

Beehive oven · East annex

A domed oven built from local clay holds heat for flatbreads, slow-roasted roots, and whole fish wrapped in agave leaves. The yard opens at 11:00 a.m. for lunch flatbreads; oven temperature peaks around 4:00 p.m. for dinner service.

Dawn Bread Station

Morning only · Kitchen court entry

Before the main kitchens fully open, a small station offers fresh loaves, honey butter, and stone-ground coffee. Included for lodging guests; walk-in courtyard seating available for others when space permits.

Copper Bar

Evenings · West gallery

A narrow counter under a copper canopy serves agave spirits, desert herb infusions, and non-alcoholic shrubs. No televisions, no slot-machine sound bleed — just the clink of glasses and conversation from the court below.

Signature plates

Menus shift with season and what the mesa suppliers deliver. These dishes anchor most weeks:

  • Mesquite ribeye with charred scallion butter — cut thick, rested on warm stone, served with blistered peppers
  • Clay-oven flatbread with roasted squash and sage oil — lunch staple from the Ember Line’s sister oven
  • Agave-glazed pork shoulder — slow smoke through afternoon, shredded for courtyard tacos at dusk
  • Chilled cucumber and melon bowl — served during plunge hours when the sun is highest
  • Night-bloom salad — greens, pickled onion, and petals from the courtyard jasmine hedge (seasonal)
  • Copper Bar old-fashioned with desert rosemary — mesquite-smoked bitters, large cube ice

Reservations recommended for dinner Fri – Sun. Lodging guests receive priority seating in the inner court. For dietary restrictions, note them when booking or speak with the line chef before service — our kitchens handle gluten-free and vegetarian requests daily but need notice for complex allergies.

Room service is limited to cold plates and bread after 10:00 p.m. We encourage guests to walk down to the court instead — the lanterns are lit by then, and the temperature finally drops to something humane.
